Caprese Panini

While I was on vacation in Colorado I ate a lot of fresh fruit and salads… it was wonderful! One thing I knew I wanted to eat while away was Caprese anything. Tomatoes, mozzarella, and basil is not deemed as a meal in my household, so I took advantage of fixing it while away. My Mom had a Foreman grill at her place, but I used my grill pan instead when duplicating it at home.

I was also able to use fresh basil from my garden!!! I can’t wait until I can also use my fresh tomatoes.

The bread is brushed with olive oil and I sprinkled Kosher salt and cracked black pepper over the tomatoes and cheese before assembling.

Sugar Daddy didn’t want this for his lunch, but Teen and Girl loved the sandwich! It’s super crisp (when done right) and the flavor is amazing. The key is to press the sandwich, like a Panini, and not overdo the butter or oil on the bread or else it just becomes a greasy mess. If you have a Panini press then lucky you. I could live on Panini variations for every meal!

I used my mallet to push down on the sandwich. Make due with what you have! A foil covered brick would work great too!

    Funny! I could eat it a couple of times every week. I have a TON of basil so I’ll probably be making pesto very soon.

    YUM!!! i love caprese dishes. I do a caprese pasta salad, and throw in some olives and artichoke hearts. great for summer, and SOO delish!

    There’s a place here called “That little bread company” and everything is organic & the bread is made fresh every day. It’s so amazing! My favorite is called the California something & it is AMAZING!

    I make caprese for my husband all the time and never thought to turn it into a panini. Definitely making this!!

    They are SO good! I eat them at least once a week, and once my tomatoes in the garden start growing I’ll probably eat it more!
