Nacho Love: Week Three

Every week I say “these are the best nachos”. But, honestly, these nachos ROCKED! My kids love shrimp, so they were very excited about the nachos this week. Sugar Daddy picked out little baby shrimps which worked perfectly as I didn’t have to chop them up. We used the frozen pre-cooked shrimp, and they were very yummy.

Cilantro Lime Shrimp Nachos

Pre-cooked frozen shrimp (the teeny tiny ones), thawed
Lime tortilla chips
Mexican white melting cheese (I used a brand from Costco, pre-shredded and VERY good for melting)
1 can ro-tel tomatoes, drained
Cilantro

Marinade for shrimp:
extra virgin olive oil
kosher salt
cracked black pepper
habanero or cayenne pepper powder (to taste)
2 garlic cloves
2-3 Tbsp lime juice (or more)

In food processor add garlic cloves and cilantro. Put on lid and begin to blend while drizzling in olive oil & lime juice. Add seasonings. Continue to blend until smooth. The mixture should be pourable.

Mix the sauce with the thawed shrimp. Saute in olive oil for no longer than a couple of minutes, preferably just 1 minute… this is just to mix the flavors and heat them up since the shrimp are pre-cooked. They will also be in oven so be careful not to overcook.

Cover cookie sheet with foil. Layer chips, cheese, shrimp, rotel tomatoes, and then a bit more cheese in that order.

Bake at 400 just until cheese is melted (be careful not to overcook shrimp).

Eat right away. Enjoy! (I added guacamole to mine because I add that to everything. But it is not needed.)

    I love nachos and have been craving them something wicked since I started my diet after new years! I’m with you on the guac too,…mmmmm….never tried baby shrimp though, will have to give it a whirl. Never seen lime tortilla chips in Canada though…will have to be creative on that one!
