Birthday Cookies & Frosting

These cookies have been eaten by many kids in our school district. They are my go to recipe for every class party & birthday treat day because they are delicious, easy to transport, and consistent. They have never failed me. They aren’t a delicate sugar cookie but instead a thicker cookie that holds up to decorating and transporting really well. And the butter cream frosting that is SO yummy!

Last night I made 50 of these; some for Tween’s class and some for Girl’s class. I also made a couple of extra for the PE and Music teacher because I think they all too often are forgotten.

The shape of the cookies were a little “off” because I was making them larger and could only bake 6 at a time. Even with the larger cookie sheet a few of them crowded each other. But I really don’t think anyone will care once they taste them!

Birthday Sugar Cookies

1 stick unsalted butter, room temperature

1/2 cup shortening

1 cup sugar

1 tsp pure vanilla extract

1 egg

2 1/2 cups flour (I always use unbleached)

1/2 tsp baking soda

3/4 tsp salt

2 Tbsp whole milk, if needed

Preheat oven to 400 and cover cookie sheets with parchment paper.

Cream together the butter, shortening, sugar and vanilla. Beat well. Add egg and beat until fluffy. In a separate bowl combine the flour, salt, & baking soda. Slowly mix the flour mixture into the butter mixture. Blend in milk if needed (I always add the milk). Drop on prepared cookie sheets and bake 10-12 minutes.

* Note *  I flatten each cookie with the underside of my measuring cup that has been dipped in flour. I like to have the flat cookie to decorate. For the 50 large cookies I had to quadruple this recipe.

Buttercream Frosting

1 cup butter, room temperature

1 cup shortening

2 lbs confectioners’ sugar

1 1/2 tsp pure almond extract

1 1/2 tsp pure vanilla extract

1/4 tsp salt

whole milk (if needed)

Beat all ingredients together except for milk.  I don’t add milk when using to decorate cookies because I want a stiffer consistency. I used this frosting for Girl’s flip flop cake and added about 1/4 cup milk to cover the cake. This recipe will make plenty to decorate 50 sugar cookies, plus some. I don’t like a super sweet frosting, but if you do, then feel free to add more of the powdered sugar.Tween & Girl got to choose their own 2 color combo from my assortment of food coloring pastes.
